Quality

  • From the receipt of goods to the finished menu in the canteens, we ensure product safety and hygiene in our canteens and cafeterias by complying with all legal standards and our HACCP concept.
  • All products are purchased in defined quality from selected, certified suppliers. We also attach great importance to regional products. Freshness is the be-all and end-all, especially when it comes to fruit and vegetables.
  • Wherever possible, we avoid using additives that have to be declared. Genetically modified foods are not used.

  • We support many suppliers from the region
  • Through centralised purchasing, transport routes can be kept short and environmentally harmful emissions can be reduced.

Hygiene concept

  • We implement the legal standard HACCP (Hazard Analysis and Critical Control Point) in our canteens and cafeterias. This enables us to control and eliminate sources of danger at every stage from the receipt of goods to the finished menu at the food counter. Defined guidelines and limits provide the framework for product safety.
  • In all canteens, samples of all dishes are taken and kept frozen for 14 days in case guests complain about a meal. Compliance with defined guidelines and limits can be traced at any time. For this purpose, we document incoming goods inspections, temperature records or even training certificates of employees. External hygiene audits check all facilities for compliance with strict hygiene requirements.

Organic Certification

Our organic certification allows us to advertise organic products as "BIO".

  • What does organic farming mean?
    Organic farming is a holistic modern form of agriculture. In addition to the production of high-quality food, the focus is on the protection of the environment, nature and animals. The most important consequences: No genetic engineering, animal meal, antibiotics and fattening aids in the feed as well as chemical-synthetic fertilisation. Instead, a varied crop rotation in the fields for healthy soil and sustainable soil fertility.
  • What are the arguments in favour of using organic products?
    Organic products are good for the whole environment: less CO2 - a contribution to climate protection, less nitrate and pesticide residues in drinking water - a contribution to water protection. Studies show that organic products generally have more ingredients and fewer residues.
  • How are organic products controlled?
    The production, manufacture and sale of organic food are strictly regulated by law. The path from the farmer to the shop and kitchen counter can be traced without gaps. Every organic farm, whether producer or processor, is inspected at least once a year. Producers must disclose all recipes for inspection. If a farm violates the requirements, sanctions may be imposed. In addition, unannounced spot checks are also carried out.

    Organic components and organic dishes are indicated on the menu or at the serving counter.
